The method involves introducing a cleaning liquid in an cooking apparatus (10). A heating steam is produced to act for a predetermined time on the various components of the cooking apparatus during which the cooking chamber is made pressure-tight. The pressure is released, and the cleaning liquid is discharged. The pressure surges are produced by opening and closing of a pressure valve (40) during the effect of steam on the components of the cooking apparatus.
