摘要 PURPOSE: A manufacturing method of drying red sea cucumber is provided to keep the size of the protruding part of the red sea cucumber, the form and shape of the red sea cumber and the texture of the red sea cucumber. CONSTITUTION: Internal organs in the red sea cucumber are removed. The red sea cucumber without the organs comprises a cover mucus of which the pH is 6-8. The neutralized red sea cucumber is dipped into salty water. The dipped red sea cucumber is boiled. The boiled red sea cucumber is dried. A neutralization step of the red sea cucumber without the organs is dipped into potassium aluminum sulfate solution of which the pH is 3-5. The neutralization step of the red sea cucumber without the organs is dipped into vinegar of which the pH is 3-5. A drying method of the red sea cucumber is to include a preliminary step to allow the neutralized red sea cucumber to have 40-60% of moisture and another step of preserving the boiled red sea cucumber with salt.
