<P>PROBLEM TO BE SOLVED: To provide an excellent animal meat product improver by improving tapioca starch, and to provide an animal meat product through the addition of the improver. <P>SOLUTION: Oil-processed acetylated tapioca starch which is made by oil-processed acetylated tapioca starch made by acetylating tapioca starch by vinyl acetate is used as the animal meat product improver. It is preferable that the oil-processed acetylated tapioca starch has an acetyl group content of 0.2-1 mass%, and when giving while stirring, a continuous heating condition from 50°C to 95°C for 30 min to a water suspension bringing the concentration of the starch to 6 mass% at a dry matter conversion followed by retaining for 30 min at 95°C, a breakdown value obtained by subtracting a bottom viscosity after retaining for 30 min at 95°C from a peak viscosity of the starch suspension is ≤200 BU.
