FIELD: food industry.SUBSTANCE: invention relates to preservation industry and may be used during production of tkemali, cherry plum, mirabelle and cornel compote in jars SKO 1-82-1000. After packing into jars one performs fruits pouring with 60°C water during 2-3 minutes with subsequent replacement of the water with 80-85°C syrup. Then the jars are sealed, put into the carrier ensuring mechanical air-tightness, subjected to sequential staged showering with 80°C water during 6 minutes and with 85°C water during 25 minutes. The jars are cooled by way of spaying with 80°C water during 6 minutes, with 60°C water during 6 minutes and with 40°C water during 6 minutes; during the whole heat treatment process the jars are turned upside down with a frequency equal to 0.166 s.EFFECT: method allows to reduce the process duration, to ensure the technological cycle continuality and the products quality enhancement. |
