PURPOSE: A high-vacuum dryer for manufacturing red ginsengs is provided to reduce thermal denaturation of ginsenoside during a drying process and secure a large surface area by forming pores in the red ginsengs. CONSTITUTION: A vacuum dryer(10) supplies a thermal medium to a heating plate at a rear side, and an inlet tube and an outlet tube are connected to the vacuum dryer. A thermal medium supplier(20) supplies the thermal medium to the vacuum dryer. A first cooling device(30) cools vapor discharged from the vacuum dryer. A vacuum pump(40) controls a degree of vacuum inside the vacuum dryer. A second cooling device(50) re-cools a refrigerant, which is circulated by the vacuum pump. A collection tank(60) collects condensation water of the first and second cooling devices. A chiller(70) supplies the refrigerant to the first and second cooling devices. A controller(80) controls the degree of vacuum and temperature inside the vacuum dryer and controls the thermal medium supplier and the vacuum pump.
