发明名称 METHOD FOR PRODUCING CANNED-FRUIT CONTAINING CARBON DIOXIDE GAS
摘要 <P>PROBLEM TO BE SOLVED: To make sufficient carbon dioxide stay in a container, the carbon dioxide being generated when carbon dioxide-containing canned-fruit is produced by making use of a reaction between a carbonate such as sodium hydrogen carbonate and an acidulant such as citric acid. <P>SOLUTION: After a jelly solution which contains carbonate is put into a container, and cooled and gelated, a solution which contains an acidulant is added to decrease contact between the carbonate and the acidulant. Consequently, the generation of the carbon dioxide at this point of time is minimized. Then, the container is sealed and dipped in warm water of at least certain temperature at which a gelatinizer re-dissolves. The gelatinizer dissolves, and the carbonate and the acidulant mix together and react to generate carbon dioxide in the container.
