<P>PROBLEM TO BE SOLVED: To provide a novel maillard reaction inhibitor. <P>SOLUTION: The maillard reaction inhibitor comprises a phenylethanoid derivative represented by formula (I) or a salt thereof as an active ingredient. The maillard reaction inhibitor comprises a plant such as olive containing hydroxytyrosol or tyrosol, or an extract of the plant, as an active ingredient. Food and beverage containing collagen and the phenylethanoid derivative are also provided. The maillard reaction inhibitor exhibits a high maillard reaction inhibitory action, effectively suppresses production of AGEs and is thus capable of preventing and treating various symptoms induced by AGEs, for example, suppressing aging caused by the maillard reaction. The maillard reaction inhibitor is also capable of effectively preventing and treating diabetic complications. The food and beverage comprising collagen and the maillard reaction inhibitor are capable of inhibiting the maillard reaction in food and suppressing food deterioration, thereby keeping the quality thereof. <P>COPYRIGHT: (C)2013,JPO&INPIT |
