<p>A nut-based milk analogue composition that has a substantially similar nutritional profile as cow's milk for at least one of the components in the milk selected from : protein, total fat, total carbohydrates, calcium, sodium, riboflavin, and energy, and which includes (i) at least one nut or seed that provides at least a substantial portion of a fat component, (ii) a protein component, and (iii) a carbohydrate component, as an emulsion in water, and the solid components being in finely divided form. Preferably the nut or seed component is macadamia nuts. Ideally, the (i) the nut or seed comprises from 2.0 to 7.0 % by weight, (ii) the protein component comprises from 1% to 5% by weight, and (iii) the carbohydrate component comprises from 2% to 10% by weight of the composition, the remaining components being mostly water.</p> |
