METHOD FOR MANUFACTURING VINEGAR CONTAINING CUDRANIA TRICUSPIDATA

PURPOSE: A method for manufacturing vinegar using Cudrania tricuspidata is provided to easily and effectively obtain Cudrania tricuspidata vinegar which has antioxidative and anticancer effects and is able to prevent and treat diabetes and hypertension. CONSTITUTION: A method for manufacturing vinegar using Cudrania tricuspidata comprises: a step of washing Cudrania tricuspidata; a step of pulverizing the washed Cudrania tricuspidata; a step of adding sulfurous acid and hydrolyzing with purified water; a step of boiling in a water bath and extracting; a step of adding a dried persimmon slurry or powder to the extract and adjusting sweetness with honey; a step of adding tartaric acid and adding yeast; a step of intermittently stirring and fermenting; a step of adding purified water and preparing to contain 6-7% alcohol; a step of adding a vinegar starter and fermenting under an anaerobic condition; a step of adding 0.01-2.0% of pegmatite and filtering; and a step of sterilizing and maturing for 3 months to 1 year.
