摘要 PURPOSE: A sweetness enrichment composition is provided to have excellent sweetness enrichment, especially, the almost the same or superior sweetness effect than the conventional sweetener, and decreased calories in terms of nutrition by including glycan separated from soy sauce. CONSTITUTION: A sweetness enrichment composition includes glycan represented by general formula 1. (Hex)_5-(HexNac)_1 In the general formula, Hex is hexose, and HexNac is N-acetylhexosamine. The glycan is included in soy sauce or a soy sauce fraction. The sweetness enrichment composition includes the glycopeptide fraction of soy sauce. A glycopeptide fraction yielding step comprises: a step of removing precipitate by centrifuging soy sauce; and a step of separating the glycopeptite fraction with 500-10,000 Da of a molecular weight by ultrafiltrating the product.
