摘要 PURPOSE: A soybean-derived medium for fermenting lactic acid bacteria is provided to enhance activity of a fermentation starter and to ensure functionality of lactic acid bacteria probiotics and culture prebiotics. CONSTITUTION: A soybean-derived medium is used for fermenting lactic acid bacteria. The soybean is selected from a group consisting of white soybean, yellow soybean, green soybean, brown soybean, and eyebrow soybean. The soybean is prepared by removing the coat and germinating. The lactic acid bacteria are selected from a group consisting of Lb. farciminis, Lb. homohiochii, Lb. pentosus, Lb. plantarum, Leu. paramesenteroides, Leu. citreum and Leu. Lactis. A method for preparing the medium comprises: a step of removing the coat of the soybean; a step of germinating the soybean; a step of pulverizing and homogenizing the soybean; and a step of sterilizing the soybean.
