<P>PROBLEM TO BE SOLVED: To provide a system safe and hygienic, and facilitating the management of producing conditions and quality adjustment in a coagulating apparatus for bean curd. <P>SOLUTION: Soybean milk and a coagulant are supplied from a soybean milk supply means 5 and a coagulant supply means 6 into a coagulation container 2 fixed to a base 3 and covered with a lid 8, and while maintaining a state of shutting up water vapor supplied by a water vapor supply means T6 in the coagulation container substantially blocked with the lid, the soybean milk is stirred by a stirring means 4 or the flow is controlled by a flow control means 10 to produce a soybean milk coagulum, or after the soybean milk coagulum is produced, the soybean milk coagulum matured by the stirring means is uniformly crushed and delivered to a molding process being a post-process from a soybean milk coagulum delivery means 7. <P>COPYRIGHT: (C)2013,JPO&INPIT |
