FIELD: food industry.SUBSTANCE: invention relates to food industry. The method envisages prime grade wheat flour, sorbitol, vegetable oil, ammonium carbonate, soda and water introduction into the gummy gingerbread formula. Additionally, into the formula one introduces garbanzo protein isolate in an amount of 5% - 8% of the total quantity of wheat flour as well as "Rovifarin" premix in an amount of 0.25% - 0.5% of the total quantity of wheat flour. Then dough is kneaded till homogeneous mass production and is stored during 20-30 minutes, rolled, moulded and baked.EFFECT: invention allows to manufacture a product with extended dietary properties, enrich it with indispensable amino acids and vitamins and improve organoleptic indices.2 ex |
