摘要 PURPOSE: A manufacturing method of red pepper paste is provided to use Rhizopus mycelium having a property self-producing an anti-oxidant activity material, besides the conventional edible or medicinal mushrooms with beans as a culture medium in a bamboo tube. CONSTITUTION: After beans are soaked in water, the strained beans are sterilized at 110-130deg.C for 15-25 minutes. A predetermined amount of Rhizopus spawn is inoculated with the sterilized beans, and cultivated at 30-35deg.C and 60-70% of humidity for 20-30 hours to take root the Rhizopus mycelium on beans. 85-90 weight% of red pepper paste and 10-15 weight% of beans in which the Rhizopus mycelium takes root are mixed. The mixture is stored in a bamboo tube in which multiple holes of 2 mm of diameter are formed at an interval of 15-20 mm, and aged at a room temperature for 150-1,000 days. The Rhizopus spawn inoculum size is 0.1-0.5% (0.1-0.5g/kg).
