<P>PROBLEM TO BE SOLVED: To provide a deep color malt extract free from an anxiety of safety, and coloring food and drink to brown color through a small amount use, and to provide a method for efficiently producing a taste or smell masking agent derived from a malt extract, effectively decreasing taste or smell of an edible product, and suppressed in giving taste, flavor and color derived from a malt extract to the edible product. <P>SOLUTION: A method for producing the deep color malt extract includes a process of preparing an untreated liquid malt extract having ≥30 value of color valency (wavelength: 500 nm)/solid content percentage, a process of depolymerizing solid in the untreated liquid malt extract, and a process of removing the solid with a low molecular weight. The deep color malt extract thus obtained has a weight percentage of solid with ≤2,000 molecular weight of <20 w/w% to the whole amount of solid, and a value of the color valency (wavelength:500 nm)/solid content percentage of ≥70. <P>COPYRIGHT: (C)2013,JPO&INPIT |
