<P>PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsified oil-and-fat composition for the production of cream for beverages, containing a flavorous lauric oil-and-fat in a high oil content, which shows high emulsion stability. <P>SOLUTION: The oil-in-water type emulsified oil-and-fat composition for the production of cream for beverages contains 40-60 mass% of the lauric oil-and-fat, and 0.6-5.0 mass% of non-micelle protein but does not contains more than 0.3 mass% of micelle protein, wherein the average particle size of the emulsified oil-and-fat composition is 0.8 μm or smaller. <P>COPYRIGHT: (C)2013,JPO&INPIT |
