PURPOSE: A manufacturing method of bean paste and soy sauce using oak is provided to improve original flavor and taste of the bean paste and soy sauce which cause repulsion without damaging unique active ingredients of the bean paste and soy sauce. CONSTITUTION: A manufacturing method of bean paste and soy sauce using oak comprises the following steps: mixing and steaming 5-15 wt% of oak chip and 85-95 wt% of purified water; separating oak chip from the steamed purified water and soaking by putting beans into separated purified water; manufacturing fermented soybeans with the soaked beans; primarily aging after putting the feremented soybeans, salt water, and oak chips into a jar with a weight ratio of 4 : 5 : 1; and isolating solid fermented soy beans from the jar, crushing and secondarily aging by putting the crushed solid fermented soy beans into a separate jar. |
