A method and apparatus for removing fat from one face of a meat cut (2), where a knife (12) tool cuts a layer of fat (4) and possibly skin (4a) from said face. The knife tool (12) is adapted to cut across the entire width of said meat cut (2) along a desired trimming interface. The knife tool (12) comprises at least two controllable blade parts (13), each comprising a cutting edge (13a), the blade parts (13) extending between said first face and a fat-to-lean interface (22) without intersecting said first face. The position of said cutting edges (13a), is continuously adapted, by controlling said at least two controllable blade parts (13a), to cut following said desired trimming interface, whereby the fat (4) and possible skin (4a) is trimmed from said lean (3) in said one single piece of fat (4). |
