<P>PROBLEM TO BE SOLVED: To provide processed cheese and a method for producing the processed cheese easily producible and presenting an excellent scorching color with short-time heat treatment. <P>SOLUTION: The processed cheese cut out into a cylindrical shape of 10 mm (diameter) ×20 mm (height), has an oil-off area of 3 to 25 cm<SP POS="POST">2</SP>when held on filter paper at 90°C for 120 minutes, and contains 0.1 to 5.0 wt.% of saccharide.
