<P>PROBLEM TO BE SOLVED: To provide instant noodles which cannot be conventionally achieved by durum wheat flour as a main raw material, and a process for producing the same. <P>SOLUTION: Instant dried pasta very excellent in taste, palatability and untangling can be produced by using durum wheat flour as the main raw material, further adding a solid state oil or fat to a noodle raw material, bringing dough obtained by a conventional process in a noodle-processing step to a small mass or a plate-like state by pressurizing under reduced pressure, subsequently cutting the dough into a noodle strip and drying the noodle strip with hot air after pregelatinization. <P>COPYRIGHT: (C)2013,JPO&INPIT |
