摘要	PURPOSE: Dokdo(Korean island) deep sea regosol-derived novel lipase ES2-1 and a use thereof are provided to decompose olive oil containing oleic acid and linoleic acid, and to be used as a hydrolase. CONSTITUTION: Lipase contains an amino acid sequence in sequence number 1. A gene encoding lipase contains a nucleic acid sequence of sequence number 2. A vector contains the gene and is pUC118 vector. A transformant is prepared by using the vector. The transformant is E.coli.
