PURPOSE: A manufacturing method of eggs with low cholesterol content compared to a regular eggs manufacturing method is provided by using alkaline water instead of feed containing specialized nutrients to laying hens. CONSTITUTION: Oyster shells, scallop shells, and cockle shells are roasted at 1,000-1,300 deg. C, and pulverized to 320-450meshes to manufacture ionized calcium. A weight ratio of the oyster shells, scallop shells, and cockle shells is in a range of 6:2:2 with the permissible range of +/- 10%. 250g of ionized calcium is mixed with 1,500-2,000kg of water to make alkaline water, and the alkaline water is provided to laying hens. The alkaline water is pH 8.5-9. The cholesterol contained in eggs is 100-200mg/100g, and the calcium content is 90-120mg/100g.
