PURPOSE: A naturally fermented red ginseng and a manufacturing method thereof are provided to increase red ginseng active ingredients by repeating steaming and natural fermenting steps of raw ginseng and to reduce harmful components. CONSTITUTION: A manufacturing method of naturally fermented red ginseng comprises: steaming, hot drying, and then cold drying red ginseng; steaming the steamed ginseng and naturally fermenting the same for 10-60 days; and drying the fermented ginseng at 50-100 deg. Celsius for 12 to 48 hours. In the first step, steaming is performed at a temperature of 50-100 deg. Celsius and a pressure of 5-50 atmospheric pressures; hot drying is performed at the temperature of 50-100 deg Celsius for 6-48 hours; and cold drying is performed at the temperature of -20-0 deg. Celsius for 6-48 hours. |
