摘要 <P>PROBLEM TO BE SOLVED: To provide a textured vegetable protein material which has a hard texture similar to meat and also has a favorable flavor with less bitterness and acidity. <P>SOLUTION: The textured vegetable protein material includes: a vegetable protein material; and a sugar alcohol, the content of the sugar alcohol being 0.1 wt.% or more of the dry weight, has an expanded texture, has a water absorption ratio of 1 time or more, has a hard texture similar to meat and also has a favorable flavor with less bitterness and acidity. The textured protein material is produced by adding water to a material containing a vegetable protein material to which a predetermined amount of sugar alcohol is added, extruding the resulting mixture under pressurization and heating to expand the mixture. <P>COPYRIGHT: (C)2013,JPO&INPIT
