GAS COMBUSTION-TYPE DEEP FRYER SEPARATING OIL AND WATER

The present invention relates to a gas combustion-type deep fryer separating oil and water, and more particularly, to a deep fryer which has an oil layer (A) and a water layer (B) formed separately at the upper and lower portions, respectively, of a deep frying vessel (10) in the main body (2) of the deep fryer, wherein oil in the upper oil layer is heated by a heater (30) to deep fry and cook food, while deep fried residue from the food is cooled in the water layer by cooling water supplied through the nozzle (41) of a cooling water pipe (40) and discharged through the discharge hole (11) of a lower sloped discharge outlet. The heater provides heat by circulating and supplying heat through a combustion pipe (35) from a burner (33) combusting gas and air. The heater is configured to be detachably assembled and installed so as to be inserted vertically over the top of the combustion pipe. The lower sloped discharge outlet (12) of the deep frying vessel (10) is configured such that the discharge hole (11) is disposed at the front, central, lower portion thereof. Thus, heating by means of the heater using gas is economical, and the detachable structure of the heater and the structure of the front, central placement of the lower discharge outlet of the deep frying vessel allows for excellent efficiency of cleaning and maintenance for the user. The interfacial area is minimized at the boundary portion between the oil layer and the water layer inside the deep frying vessel in order to minimize heat loss from the oil layer. Also, by adopting a structure in which external air enters the combustion pipe of the burner, an increase in combustion efficiency is realized through complete combustion, thereby providing good economic feasibility.
