<p>PURPOSE: A fish lecithin extracting method using supercritical or subcritical carbon dioxide is provided to enable users to obtain lecithin with high food safety compare to the lecithin obtained from egg yolk or soybean. CONSTITUTION: A fish lecithin extracting method using supercritical or subcritical carbon dioxide comprises the following steps: freeze-drying fish(S100); removing lipid from the fish using the supercritical or subcritical carbon dioxide(S200); and separating the lecithin from the fish extraction residue without the lipid using ethanol(S300). The supercritical or subcritical carbon dioxide is obtained by pressurizing liquid carbon dioxide in the pressure of 80-500bar, and heating the carbon dioxide at 20-80 deg C.</p> |
