<P>PROBLEM TO BE SOLVED: To provide liquid food that contains a cellulose composite excelling in acid-proof stability, and fruit and/or vegetables, excels in suspension stability and fluidity when taken out of a container, hardly causes liquid dripping from bread, dough, or the like without soaking into a food material or the like, and excels in heat-resistant shape retention and color retentivity. <P>SOLUTION: The liquid food contains the cellulose composite containing cellulose and hydrophilic gum and having a storage modulus (G') of 0.06 Pa or more in an aqueous dispersion of pH4 containing 1 mass% of the cellulose composite, and fruit and/or vegetables. <P>COPYRIGHT: (C)2013,JPO&INPIT |
