PURPOSE: A method for manufacturing abalone dumpling is provided to maintain proper texture, original color, and nutrients of abalone. CONSTITUTION: A method for manufacturing abalone dumpling comprises: a step of releasing abalone shells and separating abalone into flesh and intestine(S1,S2); a step of steaming and chopping the abalone flesh(S3-1,S4-1); a step of mixing the chopped abalone flesh and other ingredients and preparing a filling(S5-1); a step of steaming and juicing the abalone intestine and sterilizing by UV ray(S3-2,S4-2); a step of mixing 10-100 parts by weight of the abalone intestine juice and 100 parts by weight of flour and preparing dough(S5-2); and a step of filling a ball of dough with the filling and making dumpling(S7).
