摘要 PURPOSE: A manufacturing method of red pepper paste is provided to improve health functionality by using Broussonetia kazinoki including various active ingredients. CONSTITUTION: A stem of Broussonetia kazinoki is wasted and boiled to peel off the skin of the Broussonetia kazinoki stem. 15-40 weight% of peeled Broussonetia kazinoki stem are added to 60-85 weight% of water to manufacture liquid Broussonetia kazinoki extract. 5-15 weight% of pulverized malt are placed in a cotton wrapping cloth to be put into 85-95 weight% of the Broussonetia kazinoki extract and are rubbed to filter out malt and to manufacture clear malt by being filtered through a fine sieve. 85-90 weight% of malt and 10-15 weight% of glutinous rice flour are added to saccharize and manufacture grain syrup by heating the same. 45-60 weight% of grain syrup, 20-30 weight% of red pepper, 10-20 weight% of fermented soybean powder, and 5-15 weight% of salt are mixed then fermented.
