PURPOSE: A heat exchanger and a fryer with the same are provided to quickly restore the temperature of oil in an oil storage unit over a predetermined level by employing one or more heat transfer units with tooth-shaped portions on inner walls of an outer case. CONSTITUTION: A heat exchanger(10) comprises an outer case(12) and one or more heat transfer units(20). The outer case has an inlet part(11) on one side to let high-temperature external combustion gas in and an outlet part(11a) on the other side to lead the interior combustion gas to outside. The heat transfer units are formed on both inner side walls of the outer case and spaced from each other. The heat transfer units have a first heat transfer metal piece(13) on the edge thereof in which a tooth-shaped portion(13a) is formed to contact high-temperature combustion gas. |
