PURPOSE: A method for manufacturing makkoli(Unrefined Rice Wine) with 18% alcohol is provided to ensure deep taste and flavor by long-term fermentation at low temperatures without using an artificial sweetener. CONSTITUTION: A method for manufacturing makkoli with 18% alcohol comprises: a step of putting rice and enzymes into an incubator, and saccharifying(S10); a step of boiling the saccharified liquid and cooling; a step of inoculating bacteria, and culturing(S20); a step of mixing and activating liquid yeast and dry yeast(S30); and a step of inserting the yeast into the saccharified liquid, and fermenting the yeast mixture(S40); and a step of bottling(S50).
