PURPOSE: A manufacturing method for fermented bean paste containing a mulberry extract is provided to prevent cardiovascular diseases and to restrain aging. CONSTITUTION: A manufacturing method for fermented bean paste comprises the following steps of: fermenting a fermented soybean lump; aging the fermented soybean lump in brine for 30-40 days(first aging step); separating a soybean sauce from the manufactured paste from the previous step, and mixing a mulberry extract with the paste separated from the soybean sauce; and putting the paste mixed with the mulberry extract into a pot, and aging the mixture(second aging step). A manufacturing method for the mulberry extract comprises the following steps of: adding 900-1100wt of methanol to 100wt of mulberry powder, and extracting active ingredients from the mulberry; filtering the extracted extract; vacuum evaporating the filtered extract at -40 deg. C and at 700mHg; and freeze drying the vacuum evaporated extract at -40 deg. C.
