PURPOSE: A method for slicing fish and skate is provided to maintain freshness, to save labor costs through an automated process, to enable a sanitary food processing work, and to slice the fish and skate into a standard size. CONSTITUTION: A method for slicing fish and skate using the tilt angle and the interval of a blade prevents the quality of sliced raw fish from being damaged and slices the fish and stake automatically. In the method, a cutting board bundle(300) including a cutting board(301) is used . The cutting board has a blade bundle(200) with a blade(201). The blade bundle and the cutting board bundle do horizontal movement crossly thorough a pinion and a rack structure. The method slices the fish automatically through an up-and-down motion of the blade bundle using a cam and a guide roller(205). |
