PURPOSE: A method of growing brown rice is provided to grow brown rice which comprises more nutrients such as arabinosylan, melatonine and gamma-aminobutyric acid after the bud of brown rice is grown to 30-70mm tall. CONSTITUTION: A method of growing brown rice comprises the following steps. The first step is to wash brown rice. The third step is to germinate the dipped brown rice. The fourth step is to water the brown rice repeatedly in the germinating step. The fifth step is to dry the brown rice after a bud of brown rice is grown to 2-3mm tall. The sixth step is to dip the germinated brown rice to water which is pH 6.8-7.1 and28-32>= in a sterile room where a germicidal lamp is on and humidity is 60-75%. The eight step is to grow the bud of brown rice to 30-70mm tall. In the sterile room, CO2 of 0.035~0.300 vol% / 10 Pyong is supplied and the sterile room is comprised of 22-24vol% of O2, 74~76 vol% of N2 and 2~4vol% of CO2.
