EVALUATION OR SELECTION METHOD OF BITTERNESS INHIBITOR OF CATECHINS

PROBLEM TO BE SOLVED: To provide a method for evaluating or selecting a bitterness inhibitor of catechins using a bitterness receptor responding to the catechins.

SOLUTION: The method for evaluating or selecting a bitterness inhibitor of catechins includes steps of: adding the catechins and a testing material to one or more of the bitterness receptors selected from the group consisting of TAS2R14 and TAS2R40; measuring the response of the receptor to the testing material and catechins; adding only the catechins without adding the testing material; measuring the response of the receptor only to the catechins; and evaluating or selecting the testing material as an agent for inhibiting bitterness caused by catechins when the response to the testing material and the catechin is reduced more than the response only to the catechins by comparing the response of the receptor to the testing material and catechins and the response only to the catechins.
