PROBLEM TO BE SOLVED: To provide a method for effectively sterilizing a raw vegetable and producing a lightly-pickled vegetable excellent in storage stability.

SOLUTION: The method of producing lightly-pickled vegetables includes: the step of treating the raw vegetables with heated water vapor; and the step of immersing the raw vegetables treated with the heated water vapor in a seasoning liquid.
