L-Glutamic acid is prepared by innoculating L-glutamic acid-producing bacteria of the family Corynebacteriacea into a culture medium having beet waste molasses as a principal carbohydrate source, culturing said medium under aerobic conditions in the presence of oleic acid or a salt or ester thereof, adding an alkylamine or an acid addition salt thereof to the medium at a time between the middle and final stage of the logarithmic growth of said bacteria when the optical density of the cultured medium is between 0.40 and 0.80, after deducting the figure obtained in a blank test from the measured value, and continuing the fermentation until L-glutamic acid accumulates. Salts of oleic acid include Na, K and ammonium salts, esters include polyoxyethylene mono-oleate and polyoxyethylene sorbitan mono-oleate. Specified microorganisms include Corynebacterium melasecola, lilium, callunae and acetoacidophilum and Microbacterium ammoniaphilum and flavum (var. glutamicum). |
