PURPOSE: A producing method of high protein bean curd using inner parts of soybean is provided to obtain the high protein bean curd using only vegetables instead of using egg yolks. CONSTITUTION: A producing method of high protein bean curd comprises the following steps: inserting soybean in a grinder, and grinding the soybean into the particle size of 320 meshes and the concentration of 12-13 brix; inserting the ground soybean into a compressing filter with an electric screw, and compress-filtering the soybean to obtain soymilk; boiling the soymilk in an indirect boiling pot while stirring at 102 deg C: stopping the heating process, and cooling the boiled soymilk at 38-40 deg C; inserting a coagulating agent into the soymilk, and stirring; inserting the obtained bean curd into a bean curd hardening container(7), an egg shaped mold(7b), or a jar shaped mold(7a); and sealing the container before coagulating the bean curd for 1 hour at 80-85 deg C. |
