<P>PROBLEM TO BE SOLVED: To provide a soy sauce-like seasoning with sufficient flavor, scent, and color which can be ingested by patients allergic to wheat or soy without any concern by using only rice and/or material of rice origin as the material. <P>SOLUTION: A method for manufacturing soy sauce-like seasoning includes a process of mixing rice and/or material of rice origin, chaff, and water and making malt by inoculating seed malt to such mixture, a process of obtaining unrefined soy sauce by mixing the malt obtained with salt water, and a process of fermenting and ageing the unrefined soy sauce. <P>COPYRIGHT: (C)2013,JPO&INPIT |
