摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing an ascorbic acid 2-glucoside anhydrous crystal-containing powder which can significantly produce hardly solidifying powder even when the formation rate of ascorbic acid 2-glucoside is less than 35 mass%. <P>SOLUTION: The method for producing an ascorbic acid 2-glucoside anhydrous crystal-containing powder includes the steps of: making CGTase and starch debranching enzyme act to a solution containing either liquefied starch or dextrin and L-ascorbic acid and subsequently making glycoamylase on the same in order to obtain a solution in which the formation rate of ascorbic acid 2-glucoside is 33 mass% or greater; purifying the obtained solution such that the ascorbic acid 2-glucoside content exceeds 86 mass%; precipitating the ascorbic acid 2-glucoside anhydrous crystals by a controlled cooling method or a semi-controlled cooling method; and recovering, aging, and drying the precipitated ascorbic acid 2-glucoside anhydrous crystals. <P>COPYRIGHT: (C)2013,JPO&INPIT
