PURPOSE: A producing method of butter using anhydrous milk fat is provided to obtain the butter containing 100% milk fat with the desired spreading ability regardless of the composition of the milk fat. CONSTITUTION: A producing method of butter using anhydrous milk fat comprises the following a step of inserting the anhydrous milk fat and water into milk cream, and stirring the mixture using a homo-mixer or a homogenizer. The mixture process using the homo-mixer is performed for 1~60minutes in the speed of 100~5,000rpm. The pressure for the mixture process using the homogenizer is 0~40kg/square centimeters. The homogenization is performed in a pre-homogenization process and a post-homogenization process. The anhydrous milk fat is obtained by concentrating milk fat obtained from fresh milk. |
