A method of performing a longitudinal cut along a saddle section (59) of a carcass including the steps of: a) locating a pair of spaced apart tines (52, 53) in one end of a spinal column of the saddle section; and b) moving the saddle section relative to a cutting tool (60) to cut longitudinally through the spinal column to cut the saddle section in half with the cutting tool passing between the pair of spaced apart tines. An apparatus for performing the method is also disclosed.
