PURPOSE: A pear jam composition using a crushed pear product with lactobacillus, and a producing method thereof are provided to offer excellent functionality and property to users by using fermented liquid of crushed pear without using pectin or organic acid. CONSTITUTION: A producing method of a pear jam composition using a crushed pear product with lactobacillus comprises the following steps: fermenting crushed pear with lactobacillus to obtain fermented liquid of the crushed pear; and adding sugar into the fermented liquid. The lactobacillus is selected from the group consisting of lactobacillus, leuconostoc, enterococcus, bifidobacterium, and streptococcus. |
