[Also in Division A4] A method of peeling potatoes comprises the steps of washing them, passing them through a solution containing 20% caustic soda heated to a maximum temperature of 60‹C., passing them through a drum-type washer to remove their skins, passing them through a bath containing 0.4 to 0.6% acetic acid in order to neutralize and remove from them any of the caustic soda solution, passing them through an abrading machine to remove blemishes, eyes and remaining skin or dirt, and then passing them through a bath containing up to 0.8% sodium sulphide to sterilize them, the time spent in the sterilization bath being not more than one minute. |
