The present invention relates to a water and oil type fryer having an improved cooling function. According to the water and oil type fryer, an inclined induction part is integrally formed downward from a frying part having an open upper portion and in which an electrical heater is installed and frying oil is injected, and a water bath having a narrow sectional area is disposed under the inclined induction part to minimize heat loss from the frying oil. Also, a cooling unit for cooling the frying oil is installed outside the water bath having the narrow sectional area to prevent a small amount of water injected into the water bath from being increased in temperature, thereby preventing the water from being heated by the frying oil. |
