Ozonolysis of unsaturated fatty acids and derivatives of same

Ozonolysis of unsaturated fatty acids and their derivatives, comprises (a) carrying out ozonolysis of the unsaturated fatty acid or its derivative in an organic phase comprising an organic solvent, and (b) contacting the organic phase with an aqueous phase comprising catalase and a buffer, where the unsaturated fatty acid or its derivative is a linear chain having at least eight carbon atoms. An independent claim is also included for a use of the catalase for removing reactive oxygen species from a reaction mixture comprising ozonolysis products of unsaturated fatty acid or its derivative.
