PURPOSE: A pickled black tree fungi manufacturing method is provided to use oriental medicinal materials and black tree fungi using a seasoning for improving the taste and the usefulness. CONSTITUTION: A pickled black tree fungi manufacturing method comprises: a step which dries black tree fungi to contain 70-90% of moisture after slicing the black tree fungi in which foreign substances are removed(S100); a step which prepares for a seasoning composed of more than one from a group consisting of oriental medicinal materials, an ethyl alcohol aqueous solution, sugar, vinegar, and brewed soy sauce(S200); a first ferment step which places the black tree fungi in an individual containers for 70-74 hours after cooling the boiled seasoning(S300); a second ferment step which places the black tree fungi which is separated from the cooled seasoning in an individual containers for 160-170 hours after boiling the separated product of the first fermented black tree fungi and the seasoning and cooling(S400); a third ferment step which places the cooled seasoning and the separated black tree fungi in an individual containers after boiling and cooling the separated products of the second fermented black tree fungi and the seasonings, and a packing step after storing the third fermented black tree fungi for three days at room temperature after sieving in a container.
