PURPOSE: An overheating prevention safety device of an electric fryer is provided to protect the electric fryer from overheating when a malfunction of the main control device controlling the temperature sensor or a heater occurs. CONSTITUTION: An overheating prevention safety device of an electric fryer comprises a heater(100), a relay(101), a main control unit(110), a main power shut off unit(120), and an automatic temperature control unit(130). The heater heats oil in the electric fryer. The main control unit controls the relay according to the detected temperature. The main power shuts off the unit or turns on or off the AC power supplied to the main control unit. The automatic temperature control unit turns on or off the main power shut off unit according to the detected temperature.
