<p>Microparticulation of whey protein by thermal precipitation of whey protein, comprises heating the whey proteins below their isoelectric points for protein unfolding, and carrying out whey protein precipitation only when the pH is increased in the isoelectric region after the thermal protein unfolding, where the protein content is less than 0.60 wt.%, and the mineral content of the starting substrate is less than 0.55 wt.%. The microparticles are formed without mechanical stress. An independent claim is also included for a whey protein isolate, which has a particle size of 1-15 mu m, preferably 1.5-5 mu m, where the protein content in the dried isolate is >= 90 wt.%, and the mineral content is = 5 wt.%.</p> |
