<P>PROBLEM TO BE SOLVED: To utilize yeast extract residue produced excessively as a by-product of a yeast extract and/or reduce the yeast extract residue to enable acquisition of yeast protein having a high protein content. <P>SOLUTION: Yeast protein of a protein content of ≥60% is obtained by causing a cell-wall digesting enzyme containing no protease to act on the yeast extract residue, heat-treating the residue at 70-80°C for 10-20 min, separating the residue into a fraction based on the cell wall and a fraction based on protein and drying the protein-based fraction. <P>COPYRIGHT: (C)2013,JPO&INPIT |
